Southern Style Okra Salsa
Ingredients:
1 1/2 Cups Sliced Cooked Okra
1 Cup Fresh Corn
1/4 Cup Chopped Onion
1/2 Red capsicum
Vegetable Oil
1 1/2 Cups Tomato Puree
2 Teaspoons Sugar
1 Tablespoon Flour
S & P
Method:
Cook Okra in boiling water for 10 minutes and drain. Blanch corn 2 mins. Brown onions & capsicums in vegetable oil, add tomato puree and sugar and cook for 5 mins. Then add sliced Okra and cool.
