Ingredients:

  • 500g Sultanas
  • 500g Apricots (dried) chopped
  • 500g Figs (dried) chopped
  • 500g Peanuts (salted & roasted) chopped
  • 500g Walnuts (toasted) chopped
  • 500g Pistachio slivers
  • 500g Cranberries (dried)
  • 2kg Ricotta firm
  • 200mL Honey
  • 1 Market bunch Parsley continental
  • 2 Market Bunch Shallots
  • S & P

Method:

Combine all ingredients to make firm paste. Paste should be thick and firm enough to pipe.
