The intelligent deboning system produced by Baader/Linco is so advanced that it adapts the deboning process to the individual bird size. The result is high throughput, maximised yield and excellent product quality. The system produces a wide variety of cuts and product types.
M&J has used x-ray scanning for ready to eat products for many years and has recently installed an in-line scanner on the raw cutup line for breast product. These sophisticated x-ray systems can detect foreign objects such as metal and bones so that our customers can be assured that M&J are continually implementing Quality and Food Safety improvements to ensure product safety.
Heat and control spiral ovens deliver uniform cooking with greater production output. Through computer-maintained balanced airflow every piece of product is evenly cooked, regardless of its position on the conveyor. This enables M&J to eliminate overcooking with the confidence that all product achieves the same safe core temperature.
M&J have invested in Spiral Freezers which efficiently enable rapid freezing to optimise Food Safety and quality. This individually quick frozen (IQF) process means the consumer use only what is required as the product does not stick together. Also the rapid freezing process allows the product to keep its shape, colour, shape and taste better compared to slow freezing.
M&J has invested in a Pasteurizer / Cooling system which was the first in Australia of its kind. This process ensures that cooked chicken products are microbiologically sound throughout their shelf life. The pasteurization process is a important element of M&J’s commitment to delivering Food Safety and Quality.
